Frequently Asked Questions

  • Generally

  • Mānuka honey is made from the blossoms of the New Zealand mānuka shrub. "Mānuka" is the Māori word for the South Sea myrtle (Leptospermum scoparium), also known as New Zealand myrtle. This shrub is a natural remedy in traditional Māori medicine. Mānuka honey is considered a superfood and is valued for its unique properties.
  • To protect yourself from counterfeits, the first and most important step is to ensure that the honey was harvested, inspected, certified, packaged, and labeled in New Zealand. The strict New Zealand standards do not apply to Mānuka honey exported in bulk and packaged outside of New Zealand!

TAHI is a licensed member of the Unique Mānuka Factor Honey Association (UMFHA). The UMFHA is an independent organization founded in New Zealand in 1998 with the aim of ensuring the quality and authenticity of New Zealand Mānuka honey on the international market. Its classification is the only one that tests the components of Mānuka honey for all four chemical markers defined by the MPI (New Zealand Ministry of Primary Industries). It is therefore considered the strictest and most important system for evaluating Mānuka honey.

To sell UMF™ Mānuka honey, the producing beekeeping operation needs a license from the UMFHA. Their honey must have been assessed according to the UMF™ system and bear the UMF™ seal AND the corresponding assessment number on its label. The company's license number can be found on the UMFHA website: www.umf.org.nz.

Each batch of Tahi honey undergoes a UMF™ rating from 5+ to 25+ in an independent scientific laboratory, indicating the honey's purity and authenticity. The UMF™ seal is the best guarantee of pure, high-quality Mānuka honey.

UMFHA's testing and measurement procedures are based on 100% transparency and are carried out by independent testing laboratories accredited by the MPI (New Zealand Ministry of Primary Industries). Test results can be accessed on the UMFHA website using the batch number printed on the honey jar.

  • Honey doesn't spoil, but it can change over time. Therefore, it's important to store it properly and avoid exposing it to excessive heat.

Ideally, it should be stored at a constant temperature of no more than 25°C, away from direct sunlight. It will keep longest in the refrigerator!

  • Children should not eat Mānuka honey, just like all other types of honey, until they are at least one year old: The digestive system of infants and toddlers is not yet sufficiently developed to cope with the bacteria in honey.

  • Mānuka honey from Tahi is harvested in one of the most remote and pristine regions of New Zealand. It is free from genetically modified organisms and GMOs, and contains no added sugar, water, or chemicals.

All Tahi honeys are independently tested and certified as glyphosate-free, gluten-free and GMO-free according to the guidelines of the Non-GMO Project.

  • Manuka honey has a high methylglyoxal (MGO) content. While other honeys typically have low MGO levels (approx. 1–10 mg/kg), MGO concentrations in manuka honey can be more than 100 times higher.

Furthermore, Mānuka honey is among the rarest commercially harvested honeys worldwide. Due to its unique properties, it is increasingly used in medicine, dermatology, and skincare, which is why global demand often exceeds supply.

  • Manuka honey is a precious rarity and available only in limited quantities, as the South Sea myrtle – the manuka shrub – grows exclusively in very remote areas of New Zealand. The harvest season is very short and can only take place at specific times of the year.

Tahi has established solid partnerships with landowners to ensure our beehives are placed in the best locations for high-quality Mānuka honey. We pay the landowners fairly for the honey produced on their land. Furthermore, beekeeping is very labor-intensive: we employ a relatively large number of beekeepers compared to the number of our hives.

To obtain the UMF™ seal as a mark of genuine and effective Mānuka honey, each batch of our honey is tested in independent scientific laboratories according to strict government guidelines. These testing procedures are very expensive, but they guarantee consumers pure, authentic, and high-quality honey.

  • Tahi is a licensed member of the UMF™ Honey Association. UMF™ stands for Unique Mānuka Factor, a global standard used to measure the purity and quality of single-blood Mānuka honey. Following various tests conducted in independent, government-accredited laboratories, the honey batches receive a UMF™ rating.

The UMF™ scale ranges from 5 to 30, with values above 20 being extremely rare. Methylglyoxal (MGO) is the main organic component in Mānuka honey, and its effectiveness is measured by this compound. There is a direct scientific correlation between the UMF™ score and the MGO content.

    UMF™ 5+ = MGO 83+
    UMF™ 10+ = MGO 263+
    UMF™ 15+ = MGO 514+
    UMF™ 20+ = MGO 829+
    UMF™ 23+ = MGO 1043+
    UMF™ 25+ = MGO 1200+

In addition to the MGO content, the UMF™ also measures additional ingredients such as:
    - Leptosperin as a guarantee for the authenticity of Mānuka honey
    - Dihydroxyacetone (DHA) to ensure the shelf life of the honey
    - Hydroxymethylfurfural (HMF) to ensure its freshness

The entire test series ensures that the MGO values have not been artificially altered or increased through overheating, and that the honey's special properties will remain constant throughout its shelf life. The batch number, printed on each jar of Tahi honey, guarantees complete product traceability.

Consumers can access the respective test results on the website www.umf.org.nz by entering Tahi's license number 2035 and the batch number printed on the honey jar. Tahi's single-blood Mānuka honey jars are labeled with the UMF™ and MGO ratings.

  • Unlike refined sugar or sugar substitutes, Mānuka honey contains much more than just empty calories. As a complex superfood, it boasts many beneficial properties.

Manuka honey has a higher sweetening power and better nutritional value than sugar. It releases energy more evenly.

It contains phenolic acids and flavonoids, which are a powerful source of natural antioxidants. It also contains minerals, vitamins, and prebiotics for a balanced gut microbiome.

  • 100% of the profits we make from the sale of our honey and skincare products benefit nature: they are used to preserve and renew our natural environment.

Tahi honey is environmentally friendly and carbon-negative, making a positive contribution to biodiversity. We pursue a sustainable approach, the so-called 4C philosophy: Community, Culture, Conservation, and Commerce. We align all our strategic decisions with these principles: from wildlife conservation and the use of renewable energies to preserving regional culture and providing educational programs for children on protecting our planet and our bees.

With our ethical beekeeping practices, we respect the bees and their well-being. This means that, unlike common practice in the honey industry, we do not feed them sugar water or corn syrup, nor do we administer antibiotics. We leave sufficient honey stores in the hive so that the bees can survive the winter. We refrain from using pollen traps because these can damage the delicate wings of the bees, and we also do not harvest bee venom, as this can injure or even kill the bees. Healthy bees = high-quality honey.

Our commitment to the environment and the quality of our honey have already been recognized with numerous awards.

  • The difference between pure Mānuka honeys lies in their activity (defined by the UMF™ value) – the higher the value, the more active the honey and the more intense its taste and its effect on well-being.

Honeys without a UMF™ rating are sweeter than honeys with a UMF™ rating. They are more traditional. UMF™ honeys are characterized by their depth of flavor. The higher the rating, the more intense, complex, and spicy the flavor profile.

Which type of honey you should choose depends on what you intend to use it for. Honeys with a lower UMF™ value are best suited for cooking or everyday well-being, while honeys with a higher UMF™ value are more appropriate for specific/targeted applications, such as boosting the immune system and promoting a healthy gut microbiome.

  • We are working hard to offset our carbon footprint based on a strategic ecosystem restoration system. What does that mean? At Tahi, our award-winning nature reserve in New Zealand, we have restored nearly 800 hectares, transforming it into a thriving, biodiverse ecosystem. This has increased the number of bird and plant species, as well as wetlands and native trees, ultimately acting as a carbon sink. We are now expanding our area by another 4,000 hectares. By planting native New Zealand trees instead of pines, palms, or hardwoods, which are traditionally planted for carbon offsetting but only offer short-term, limited environmental benefits, we can significantly offset our carbon footprint while simultaneously increasing biodiversity, which benefits Mother Nature in the long run.

  • We deliberately chose 100% recyclable PET plastic for our honey packaging instead of glass. Why? Because glass jars aren't manufactured in New Zealand, importing and exporting them would have a significantly negative impact on our carbon footprint. Tahi's philosophy of reduction, resource reuse, and recycling aims for precisely the opposite. Furthermore, glass is considerably heavier and requires more energy for global transport. In addition, plastic containers are less susceptible to damage and breakage, requiring less protective packaging and thus reducing our environmental footprint.
We offset the low CO2 emissions we generate through our reforestation and wetland restoration measures. In this way, we are able to go a step further in protecting nature with the resources available to us.
